Sprouted Green Moong Chat
Sprouted Moong chaat is very colorful spicy, tangy nutritious dish. A chaat is usually associated with fried foods but the sprouted Moong chaat is a healthy version of chaat with refreshing flavor.
Sprouted Moong is usually blend in taste but by adding cucumber, tomatoes, sweet potatoes, onions and spices and chutney you can makes it a wonderful dish which is very tempting to eat.
In Ayurveda there is a lot of emphasis to include Moong in daily diet. Moong could be eaten in many ways and eating Sprouted Moong chaat is one of the delicious ways to eat Moongs. They can be served for breakfast or as an evening snack. Growing Moong sprouts is fun, involve children in growing them, they will love it.

1 Teaspoon sugar (optional)
Seasoning:
½ Teaspoon chat masala
½ Teaspoon roasted jera powder
½ Red chili powder or to your taste

Directions:
1. First you have to sprout half a cup of whole green moong beans.
2. Wash and rinse sprouted Moong.

3. If you like raw sprouts green fresh taste then you don't need to boil the
sprouted Moong Beans.
4. In a pan add sprouted Moong beans and half cup of water and boil for 3 to 5
minutes or until beans become tender, but not mushy. You want the sprouts to
get soft, yet hold its shape and not become mushy. You can even keep them
half cooked if you want a crunchy taste.

5. While beans are boiling chop the vegetables and keep them aside or place
them in the refrigerator.
6. Once the Moong beans become tender transfer them into a colander to drain
the hot water out and rinse them with cold water so that they do not cook any
more.
7. Leave the cooked sprouted Moong beans in the colander for few minutes and
let all the water drains out. If you are not making chaat immediately then
transfer the Moong beans in the bowl and place them in the refrigerator.

onions, chopped or grated ginger and chopped green chilies and sugar and

9. Add chaat masala, roasted cumin powder, red chili powder and mix.
10. If you are not serving immediately then cover the bowl and refrigerate.
