(Potato patties - stuffed)
Aloo Tikki is one of the most popular street foods all over North India. On the side of the street stalls they are shallow fried on a large griddle and pushed to the edges to keep them warm and crispy. The vendors literally crowd the streets selling them.
Aloo means potato and tikki means patties. Aloo tikki is made of boiled mashed potatoes and spices and shallow fried. They are crispy from outside and soft from inside. Aloo tikki is served hot along with plain yogurt, coriander chutney, tamarind chutney and some spices sprinkle over them. Sometimes they are accompanied with cholas.
Aloo tikki can be customized according to the individual taste. Aloo ki tikki can be made in various ways. You can stuff them with green peas, moong dal or even with paneer. In this recipe tikkis are stuffed with green peas and shallow fried.

1. Add potato in a pressure cooker or a in a pot, add water. Close the pressure

2. Open the cooker and check boiled potatoes by inserting a knife or fork in the center, it should go in easily all the way to the center without any efforts, it means the Potatoes are done.

with a fork or potato masher, but by shredding potatoes come out smooth
without any small pieces.

6. Mix and knead the mashed potatoes like a dough, if it feels sticky then grease your hand and mix with red chili powder and salt well. If you like to add more seasoning to your taste then add now and mix.
7. Now wash and dry your hands and rub them with little oil.
