3. Add water in washed Moong and cover it up to 1 inch above the Moong beans.
4. Cover the bowl with a lid and soak the beans overnight or for about 8 to 12
hours. Do not over soak it, over absorption of water will also prohibit beans
from sprouting.

5 Once beans absorb the water they will swell up.
6. The next day, drain the soaking water and rinse the soaked Beans thoroughly
You can use a strainer to drain the water out. (½ cup beans become 1 cup
beans after soaking)
7. You may see some hard beans that have not swelled up, discard these hard
beans.
8. Leave the soaked Beans in the strainer for a while so that all the excess water
drains out.
9. Transfer the soaked beans back in the bowl.

11. Wet the towel and squeeze the excess water out. Now cover the bowl with
damp towel, and place the bowl in a warm dark place or in a warm indirect
sun light, because Sunlight will cause the sprouts to green up as they grow
and white sprouts are more desirable.

12. Every 6 to 8 hours rinse the beans with water, and wet the towel and cover
the bowl and put it back, because the towel and beans become dry and you
need to keep them moist. You may have to wash and rinse the beans twice a
day in summer season as they can become dry quickly.
13. Check periodically to make sure if there is enough moisture.
14. Second day you might start seeing sprouts coming out. Keep repeating the
process after every 6 to 8 hours until you have the desired size of the sprouts.

refrigerator, so that sprout do not grow longer and roots start coming out.

Tips:
1. You can buy readymade sprouts but the best and easy way to use sprouts is to make them fresh at home. They are easy and quick to sprout.
2. Keep in mind that mung beans will at least double in size during sprouting, so only sprout them as many as you need. (½ cup beans become 2 cup beans after sprouting)
3. If sprouting moong dal for chaat or for making dal then do not sprout them for too long because longer sprouts gives bitter taste after cooking.
4. Never let the sprouts grow that long so they start forming roots. After you get the desired length of sprouts keep your sprouts in the refrigerator and use them within 3 to 4 days.
5. It takes about 34 to 36 hours to sprout the beans. If you are going to cook on Saturday morning then on Thursday night soak the beans, Friday morning drain the water out and cover with a damp towel. Friday evening you will start
seeing little sprouts, and towel and beans becomes dry, wet the towel and rinse the beans and place them back. Saturday morning beans will be completely sprouted.
