Coconut chutney
(Nariyal ki chutney)
Coconut chutney (Nariyal Chutney) is a traditional south Indian chutney and a great accompaniment for many South Indian dishes especially idly, dosa, uttapams and Medu vada. This chutney is made by grinding fresh or coconut powder, channa dal, yogurt, cashew nuts, ginger and green chills and seasoned with mustard seeds, curry leaves, urad dal, red chilies and asafetida tadka. You can make coconut chutney as mild or spicy or add any other ingredients according to your taste. Normally cashew nuts are not added to the chutney but when you mix it with chutney it gives a nice sweet flavor to the chutney and tampering with Urad dal gives chutney a nice crunchiness while eating. Most of the times people hate breaking and peeling the skin of coconut as they feel it is messy and labor oriented, but chutney made with coconut powder taste as good as fresh coconut.
Ingredients:
1 Cup coconut powder
1 Tablespoon chana dal
1 Tablespoon broken cashew nuts
1 Tablespoon chopped ginger
2 Medium chopped green chili or to your taste
2 Tablespoon coriander leaves- chopped

Tips:
1. Chutney made with dry coconut powder taste as good as fresh coconut

2. You could make the coconut chutney without sautéing ginger, green chili,
dal and coconut, but it tastes better if you sauté because it takes the raw flavor
out.
3. Normally cashew nuts are not added to chutney, but when mixed in coconut
chutney gives a nice flavor to the chutney.
4. Tamarind juice could be used instead of lemon juice.
5. If you using the fresh coconut then keep the coconut in freezer for 30 minutes,
then break it with hammer. Keeping in the freezer make it easy to break the
shell and take the coconut out.
6. Grated excess fresh coconut, fill in a plastic bag and freeze. After thawing for
use, wash 2 to 3 times and it will be as good as fresh.
7. Frozen grated coconut can be purchase from Indian grocery stores.
