Jeera aloo with green peas

                    (Sauteed boiled potato with Green peas)

Jeera Aloo with green peas is everyone’s favorite side dish. This is a very simple popular classic dish of North India especially eaten with pooris. Jeera aloo with green peas is prepared with boiled potatoes and green peas and sautéed with spice and the addition of grated ginger, green chili and coriander leaves and in the end touch of mango powder makes this dish awesome.

 When the homemakers are at loss as what to make, potatoes always come in mind and there always potatoes in the house. This is quick and easy vegetable dish goes well with any other main dish.
Ingredients:

4   Medium - size potatoes
2   Cups frozen or fresh shelled green peas
1   Tablespoon fresh Ginger - grated
3   Tablespoons Coriander leaves- chopped
1   Medium Green chili -Chopped
     (remove the seeds and membrane to reduce heat) 
1   Teaspoon Cumin seeds
1   Pinch of Asafetida (Hing)
1   Teaspoon Red chili powder
2   Teaspoons Coriander powder
2   Teaspoons mango powder (amchoor powder)
1   Teaspoons of salt or to your taste
3   Tablespoons vegetable oil

Directions:
 
1. Clean and scrub the skin of potatoes to remove dirt and wash them well.

2. Put the potatoes in the pressure cooker or a sauce pan, add water until it covers
​    the potatoes by about 1 inch.

3. Drain  potatoes in a strainer or lift whole potatoes out with a slotted spoon or
    tongs. 


4 let the Potatoes cool down.

5. Once potatoes cool down peel them and with the fingers break them into small
    pieces or with a knife cut them into small pieces.

6. Wash green peas.

7.  In a sauce pan add green peas and ½ cup of water and boil them on medium
     heat for 8 to 10 minutes or until they become tender. Drain the water out from
     the green peas. Keep them aside.

8. On medium high heat add 2 tablespoons oil in a nonstick frying pan or a heavy bottomed stainless- steel pan, add cumin seeds and asafetida and fry them for 2 to 3 minutes or until cumin seeds become brown.

9. Once cumin seeds become brown  addd boiled potatoes pieces and boiled
​     Green peas.

10. With the spatula mix Potatoes and Green peas together. 

11. Add grated Ginger and chopped green chilies and mix with Potatoes and
​    Green peas.

 12. Sprinkle coriander powder, Mango powder, red chili powder and salt, with
       spatula mix everything together and fry them on medium heat.

13. While frying, potatoes generally become dry, sprinkle 1 tablespoon  of oil over
    the potatoes and mix.

14.  Fry one side for 2 minutes then with the spatula turn them to the other side
       and fry the other side for 2 minutes, Keep repeating.

15. Potatoes looks dry to avoid adding more oil just sprinkle little water cover
      the pan and turn the heat to low, the moisture will make potatoes moist and
       the surface will become crisp.

16. In about 10 to 12 minutes the top surface of potatoes will become crisp, once
    you have the desired crispness sprinkle chopped coriander leaves and mix, turn
    the stove  off.

17. If you like you can fry potatoes and green peas little longer until potatoes 
      crest crispy.

Tips:

 For variations cook this dish with onion and garlic:  

 One medium fine chopped onion and 2 teaspoon minced garlic could be added
 to the potatoes. In the frying pan after frying the cumin seeds and asafetida add
 chopped onions and minced garlic and sauté them for 5 minutes or until they
 become light brown then add the potatoes and green peas, then follow the process
for frying.
